Garlic bok choy on chickpea pancakes

Hi! This super easy fix was such a satisfying lunch and was so simple to make. The flavours really come through and I enjoyed this lunch so much. This was made completely with all the leftover veggies in my fridge and I hope it offers some inspo for a quick fix on a busy weekday or a lounge weekend day. Enjoy!



Serves 2
Ingredients:

- 2 cloves garlic (minced)
- 2 handfuls bok choy
- 1 tbsp sesame seeds
- 1 tbsp lemon juice

- 1 cup chickpea flour
- 2 tbsp olive oil
- 1 cup water

- 1 avocado

Step 1: In a pan heat up some oil. Once the pan is hot, place the minced garlic and let it fry for 2 mins. Add the bok choy with a tbsp of water and pan steam until the leaves are wilted. Add the sesame seeds and lemon juice.

Step 2: In a bowl mix together the chickpea flour with olive oil and water. Combine into a homogenous mixture. With a laddle, make the pancakes. Heat up each side of the pancake for about 1 min.

Step 3: Cut your avocado into thin slices. Assemble everything onto a plate and enjoy this delicious quick fix.
