Smoothie & Chia Pudding Bowl

Smoothie bowls are super filling and really fun to make. Smoothies make amazing breakfasts because they provide vitamins and energy until your next meal. Chia pudding is also a great breakfast because it’s packed with protein and energy. That’s why I love to put the two together for my breakfast bowl. Hope you enjoy!



What you’ll need:


For the chia pudding:
  • 2 tablespoons of chia seeds
  • 1 teaspoon of coconut oil
  • ½ teaspoon of agave syrup
  • 80 to 100 mL non-dairy milk


For the smoothie:
  • 1 banana
  • 1 peach
  • ½ cup of blueberries
  • 1 teaspoon of lemon juice
  • 1 handful of cashews


Instructions:


Step 1:
Start by making the chia pudding. First, add the milk, coconut oil and agave syrup to a bowl. Whisk together. Next add your chia seeds and whisk some more. Put in the fridge and let the pudding harden. Some say to do this overnight, but the pudding can actually be ready in 15 mins.
 



Step 2:
Whilst the pudding sets, make the smoothie. Chop up the banana and the peach. Put in the blender and blend on high speed.




Step 3:
When it is blended, add the lemon juice and the cashews. The cashews should give your smoothie a thick texture.




Step 5:
You can also start chopping up whatever toppings you want on your bowl. I decided to use some plums and gooseberries.




Step 5:
Once your smoothie is done and your chia pudding has reached desired consistency, it is time to assemble the bowl. Carefully, pour the two mixtures at the same time from opposite sides of a bowl. This should look like this:




Step 6:
Now start decorating your bowl: I used the chopped plums, the gooseberries, and some chocolate chips. I also put some açai powder on the chia pudding because the colour is super pretty.


You can do this overnight, or in the morning. I like to make the smoothie and chia pudding the night before, and then assemble and decorate the bowl in the morning. Whatever you do, I hope the recipe was useful!
