The ultimate chocolate cake

Hi everyone! I present to you the most amazing, the most special, the most world-shattering chocolate cake that exists. My brother's birthday is a very special occasion for me, and every year I do my best to create the best chocolate cake for him. 
My brother was diagnosed gluten-free and dairy-free about a year ago and it was quite a frustrating change for him. So I strive to offer him the most beautiful cake for his birthday, that ends any frustration and the feeling of missing out. If you ever feel that way, I promise you won't ever again, as I give you the ultimate chocolate cake.
This cake is a double-decker chocolate cake, covered in chocolate frosting and crumbled homemade cookies. Yes, this does require some amount of time (understatement of the year) to make, but the result is so fabulous and delicious that when a special occasion comes up, keep this cake in the back of your mind. Better yet, keep this cake in your oven, because I'm sure everyone will be begging for it.





Ingredients: 

- 2 cups of all-purpose gluten-free flour (I use Schar's)

- 1 cup of cocoa powder

- 1/2 cup of potato starch (fécule de pomme de terre)

- 1 tbsp baking powder

- 1 tsp baking soda

- 1/2 teaspoon xantham gum

- salt

- 1 cup of agave syrup

- 1 cup coconut oil

- 1 cup applesauce, you can also use 4 eggs if you aren't vegan

- 2 tbsp vanilla extract

- 1 cup of water or coffee

- 2 cups chocolate chips


- 9 cookies


Step 1: Mix together the flour, cocoa, potato starch, baking powder, baking soda, salt and xantham gum.

Step 2: Add the agave syrup, coconut oil, applesauce (or beaten eggs), vanilla extract and coffee.

Step 3: Mix everything together until smooth batter forms.

Step 4: Add your chocolate chips, gently folding them in with a spatula so they are evenly distributed.

Step 5: Bake your cake for 24 mins in a round cake tin, using a toothpick at the end to check the cake is baked.

Step 6: As the cake cools, prepare your frosting and the cookies.

Step 7: Once the cake has cooled for about 20 mins, and remove the pan, letting the cake cool on a wire rack.

Step 8: Cut your cake in half, in order to create a second layer of cake to add frosting and cookies in the middle.

Step 9: Place the first half of your cake on a cake stand, and frost the top of the cake using a frosting spatula. Crumble the cookies evenly across the top.

Step 10: Place the second half on top. Frost your cake all around, then crumble the rest of the cookies and spread them evenly on top and on the sides of the cake.

Step 11: Pop your cake in the fridge until you are ready to cut into it.
