Grilled Cheese

This is the perfect hangover food if you just woke up from a crazy night out and want something warm and gooey. Grilled cheese always makes me think of childhood and simple delicious meals. My brother was craving some recently so I'm really happy to have come up with this cheese alternative recipe. The ingredients are a bit peculiar but trust the process, the end result is really worth it. I made these with some strawberry shakes and I really felt transported to an American diner!


Ingredients:

- 1/2 cup of cashews
- a carrot
- 3 tbsp nutritional yeast
- 2 tbsp tapioca starch
- lemon juice
- salt
- garlic powder
- turmeric
- Schar's GF bread


Step 1: Boil some water in a medium-sized saucepan. Add your cashews and carrots, let them cook for 10 min until the carrots are soft to the touch.

Step 2: Put the cashews, carrots, nutritional yeast, lemon juice, salt, garlic powder, turmeric and 1 cup of the cooking water in the blender. Blend until smooth.

Step 3: In a pan, pour the cheese sauce and let it thicken for 3-4 min.

Step 4: Remove the cheese from the pan. In another pan, heat up some olive and grill your slices of bread. Pour the cheese on the grilled side and add the second slice on top. After a few minutes, flip the grilled cheese.
