Raspberry coconut porridge
Hello everyone! Recently I've been experimenting with porridge as a breakfast possibility, mainly because as I'm starting university next year, I want to find quick and easy recipes which keep my filled up and keep my energy levels high; if you are gluten-free or dairy-free then you know how much of a hassle breakfast can be.
This raspberry coconut porridge is really great because it keeps you going for a long time, and it only takes about 10 mins to make.
Serves 1 to 2
Prep time: 10 min
Ingredients:
- 1/3 cup gluten-free rolled oats
- 3/4 cup of water
- 3 tablespoons coconut milk
- 1 banana
- 2 tablespoons almond butter
- handful of raspberries
- your favorite toppings
Step 1: In a saucepan, add the water, the coconut milk and half of a chopped banana. Let the mixture simmer for about 2-3 mins.
Step 2: Add your oats and let them simmer and absorb the water.
Step 3: Once your oatmeal seems ready, add the raspberries and almond butter and let the raspberries melt into the porridge.
Step 4: Turn off the heat and serve your porridge, making sure to add your favorite toppings.
