Fried rice

This is honestly probably one of the most delicious recipes on this blog. I think that since the first time I've made it, I pretty much have had it every week since. This was an amazing idea that was shared with a friend of mine, as we were frantically scratching our brains to find a good idea of what to pack for a picnic as we were going hiking. Looking in the fridge, we found various ingredients that led to this beautiful meal. This recipe is great if you have any leftover rice that you don't know what to do with. This is also part of the pack lunch series, as it is amazing the next day, both cool or warmed up. I hope you enjoy this as much as I have!


Serves 2

Ingredients:
- 1 onion
- 1 green pepper
- 2 cloves of garlic
- 1 head of fresh ginger
- 1 cup of rice
- 3 eggs beaten (optional)
- coriander
- sesame oil
- 2 tbsp GF soy sauce (tamari)
- 1 tbsp oyster sauce
- sriracha
- peanuts
- green onions

Step 1: I recommend making your rice first. I use a rice cooker to make my rice. I made 2 cups of basmati rice in about 3 cups of water, and I just switch my rice cooker on and let it do its thing.

Step 2: Dice your onion and mince the ginger and garlic.  Chop your green pepper. In a pan, add a few tablespoons of olive oil and heat them up on medium heat. Once hot, add your onion, garlic and ginger.

Step 3: Heat up in the oil until the onions have a nice translucent colour, and a beautiful smell comes through. Add your green pepper to the pan.

Step 4: In another pan, add some olive oil and let it heat up. Once hot, add in your eggs and make some scrambled eggs by scraping the sides and bottom of the pan as the eggs cook, letting the uncooked mixture touch the bottom of the pan and cook as well. Once the eggs are cooked through, take the pan off the heat.

Step 5: Once your peppers have changed colour slightly, and have pan fried (this usually takes about 15 mins). Add some sesame oil to the pan then add your rice.

Step 6: Add some soy sauce to your liking, as well as the oyster sauce and mix well until combined. Add your eggs.

Step 7: While the rice is frying slightly, chop some coriander and green onions, crush some peanuts.

Step 8: The rice is cooked when it is slightly crispy. Take off the heat, garnish with peanuts, coriander and green onions. Add some sriracha sauce for a spicy kick and enjoy this delicious meal! It's better than take out!
