Spinach and Pesto Spaetzli

This quick meal is full of flavours and so easy to make! You literally pop everything in a pan and sauté the whole thing together. Späetzli is a swiss dish that I've really missed because it's usually prepared with cheese, cream and grilled lard. Not exactly healthy. This recipe will fulfil your cravings and you'll feel re-energised thanks to the iron in the spinach and pumpkin seeds. It's truly delicious. Enjoy!



Prep time: 15min

Serves 1

What you'll need:

- half an onion

- 100g späetzli

- 3 handfuls spinach 

- 3 tsp pesto

- handful pine nuts

- handful pumpkin seeds 

Instructions:

Step 1:
Chop up the onion.




Step 2:
Heat up pan with some olive oil. Add the onion once the oil starts sizzling and sauté it until the onion becomes translucid.

Step 3:
Add the späetzli and cook for 5min. 

Step 4:
Add the spinach. I used frozen spinach because I didn't have any fresh spinach but both are fine. However, if you're using fresh spinach. Add it in the pan after 10min.



Step 5:
Once the späetzli is nearly ready, stir in the pesto. You'll know the späetzli is ready when it starts to brown a little. They usually take about 15min in total to cook.



Step 6:
If you want some crunch with your meal, you can roast some pine nuts and pumpkin seeds in a pan for about 2min. Serve it on plate and enjoy!
