Oatmeal raisin cookies
Hi! Recently I have had such a craving for oatmeal raisin cookies and let me tell you, the batch I just cooked up are such an amazing afternoon snack. These are perfectly crumbly and I love the home-baked smell they give to your home when you make them!
Makes 9 cookies
Ingredients:
- 2 cups GF oats
- 1/2 cup almond meal
- 1/2 cup rice flour
- 4 tbsp coconut oil
- 7 tbsp maple syrup
- 2 tbsp DF milk
- 1 cup raisins
- salt
Step 1: Preheat your oven to 180°C.
Step 2: In a large mixing bowl, mix together all the dry ingredients to remove any lumps.
Step 3: Add the coconut oil, milk and maple syrup. Mix until the batter sticks together.
Step 4: With your hands, make the cookies by taking balls of batter and rolling them in your hands. Press them slightly to get that perfect cookie shape and place on a lined baking sheet.
Step 5: Place in the oven for 15 mins, until the tops are golden brown.
